My favorite also happens to be really easy to make. It is based on Paula Deen’s version.
Ingredients
- 3/4 cups self rising flour
- 1/2 stick butter
- 1/4 cup water
- 1 1/2 oz bourbon
- 1 cup sugar, divided
- 2 cups peaches (about 2 large peaches)
- 1/2 cup milk
- ground cinnamon
Directions
- Preheat oven to 350 °F.
- Put the butter in a pie pan and place in oven to melt.
- Combine the peaches, 1/2 cup sugar, bourbon, and water in a saucepan and mix well. Bring to a boil and simmer for 10 minutes. Remove from the heat
- Mix remaining 1/2 cup sugar, flour, and milk slowly to prevent clumping. Pour mixture over melted butter. Do not stir.
- Spoon fruit on top, gently pouring in syrup. Sprinkle top with ground cinnamon. Batter will rise to top during baking. Bake for 30 to 45 minutes.
Notes
- I’d like to try adding a little lemon juice to the peach mixture. Maybe instead of the bourbon.
