Peach Cobbler

Peach Cobbler

My favorite also happens to be really easy to make. It is based on Paula Deen’s version.

Ingredients

  • 3/4 cups self rising flour
  • 1/2 stick butter
  • 1/4 cup water
  • 1 1/2 oz bourbon
  • 1 cup sugar, divided
  • 2 cups peaches (about 2 large peaches)
  • 1/2 cup milk
  • ground cinnamon

Directions

  1. Preheat oven to 350 °F.
  2. Put the butter in a pie pan and place in oven to melt.
  3. Combine the peaches, 1/2 cup sugar, bourbon, and water in a saucepan and mix well. Bring to a boil and simmer for 10 minutes. Remove from the heat
  4. Mix remaining 1/2 cup sugar, flour, and milk slowly to prevent clumping. Pour mixture over melted butter. Do not stir.
  5. Spoon fruit on top, gently pouring in syrup. Sprinkle top with ground cinnamon. Batter will rise to top during baking. Bake for 30 to 45 minutes.

Notes

  1. I’d like to try adding a little lemon juice to the peach mixture. Maybe instead of the bourbon.
