Grilled Salmon Piccata

The temperature is perfect and the wildflowers are putting on a show. I had salmon so what to make? I came up with this for the Traeger.

Ingredients

  • 2 tablespoons soft butter
  • 2 tablespoons finely chopped shallots
  • 1 tablespoon roughly chopped capers
  • juice of 1/4 lemon
  • 1/2 teaspoon salt
  • 1/4 teaspoon group black peppter
  • 1/4 teaspoon garlic powder
  • 2 salmon fillets

Directions

  1. Preheat grill to 450F
  2. Mix all ingredients except salmon in small bowl
  3. Put salmon on small sheet pan. Coat generously with butter mix. You may need to use your fingers to get it to spread. You may have extra mix.
  4. Cook salmon for about 12 minutes on grill
  5. Optionally add a small spoon of the extra butter mix.
