Coleslaw

This is the base creamy coleslaw I make most often. You can riff on it a million ways. I like the colorful mix of veggies.

Ingredients

  • 1/2 head of cabbage, shredded
  • 2 carrots peeled and shredded
  • 1/2 red onion shredded
  • 1/2 red pepper shredded
  • (Optional) 1/2 Anaheim or Poblano pepper finely diced
  • 1/2 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon dijon mustard
  • 2 tablespoons cider or white white vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon salt
  • 1/2 teaspoon celery salt
  • 1/4. teaspoon black pepper

Directions

  1. Mix cabbage and 1/2 teaspoon salt in a large mixing bowl. Let sit while you prepare the rest of the veggies and the sauce.
  2. For the sauce whisk together the mayonnaise, vinegar, celery salt, and pepper in a small bowl.
  3. Mix all the veggies with the cabbage.
  4. Mix the sauce into the veggies.
  5. Chill for at least a few hours.
