This is the base creamy coleslaw I make most often. You can riff on it a million ways. I like the colorful mix of veggies.
Ingredients
- 1/2 head of cabbage, shredded
- 2 carrots peeled and shredded
- 1/2 red onion shredded
- 1/2 red pepper shredded
- (Optional) 1/2 Anaheim or Poblano pepper finely diced
- 1/2 cup mayonnaise
- 2 tablespoons sour cream
- 1 tablespoon dijon mustard
- 2 tablespoons cider or white white vinegar
- 1 teaspoon salt
- 1/2 teaspoon salt
- 1/2 teaspoon celery salt
- 1/4. teaspoon black pepper
Directions
- Mix cabbage and 1/2 teaspoon salt in a large mixing bowl. Let sit while you prepare the rest of the veggies and the sauce.
- For the sauce whisk together the mayonnaise, vinegar, celery salt, and pepper in a small bowl.
- Mix all the veggies with the cabbage.
- Mix the sauce into the veggies.
- Chill for at least a few hours.
