Cabbage and Carrots

Ingredients

  • 1/2 lb bacon
  • 1 medium green cabbage
  • 1 yellow onion, peeled and thickly sliced
  • 2 large carrots peeled and cut in ¼-inch coins
  • 2 tablespoons cup extra virgin olive oil
  • 2 tablespoons butter
  • 1 1/2 teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1/8 teaspoon crushed red pepper (optional)
  • 2 tablespoons aged balsamic vinegar ??

Instructions

  1. Preheat oven to 350F
  2. In a dutch oven cook bacon until starting to crisp
  3. Remove bacon from pan and butter, oil, add cabbage, carrots, and onions
  4. Saute for about 2 minutes stirring occasionally
  5. Add salt and pepper(s) and stir to combine
  6. Put lid on pot and put i oven for about 1 hour
  7. Stir in vinegar and serve. I didn’t do this and it came out fine so I am not sure if this is necessary.
