Ham and Lentil Stew

Usually, when we get a spiral ham there are a lot of leftovers. Don’t throw away that bone! This is one of my favorite ways of using those leftovers.

Ingredients

  • 1c French lentils
  • 1-2 tsp Chicken Better than Boullion
  • 1 Ham Hock
  • 1-2c diced leftover ham
  • 3 stalks celery, diced
  • 3 carrots, diced
  • 1 onion, diced
  • 1/2 tsp Paprika
  • 2 cloves garlic minced
  • 2 Tbsp tapioca
  • 1 tsp herbs du Provence
  • 1/4 c Sun dried tomatoes
  • Water

Directions

  1. Dump everything in the slow cooker. Add enough water that everything is just covered.
  2. Cook on low ~6 hours
  3. Scrape or pull any chunks of meat off the ham hock
  4. Serve in bowls. Garnish with minced parsley (optional).
