Usually, when we get a spiral ham there are a lot of leftovers. Don’t throw away that bone! This is one of my favorite ways of using those leftovers.
Ingredients
- 1c French lentils
- 1-2 tsp Chicken Better than Boullion
- 1 Ham Hock
- 1-2c diced leftover ham
- 3 stalks celery, diced
- 3 carrots, diced
- 1 onion, diced
- 1/2 tsp Paprika
- 2 cloves garlic minced
- 2 Tbsp tapioca
- 1 tsp herbs du Provence
- 1/4 c Sun dried tomatoes
- Water
Directions
- Dump everything in the slow cooker. Add enough water that everything is just covered.
- Cook on low ~6 hours
- Scrape or pull any chunks of meat off the ham hock
- Serve in bowls. Garnish with minced parsley (optional).
