Description
A good dressing and fresh spinach is the key. Bags of pre-washed spinach are very convenient.
Ingredients
Dressing
- 3 tablespoons EVOO
- 2 tablespoons cider vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon honey
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Toppings
- Crumbled feta
- Thinly sliced apples
- Crumbled bacon
- Thinly sliced red onion
- Tomatoes cut into bite size pieces
Directions
You can toss the toppings with the spinach, but the toppings will sink to the bottom of the tossing bowl. I prefer to add them to the top of the individual servings.
- Combine all the dressing ingredients and mix well. I like to put them in a jar with a good seal and shake.
- Toss the spinach with the dressing in a large bowl.
- Put the spinach into individual bowls and top with toppings of your choice.
