Watermelon Peach Gazpacho

Ingredients

  • 1 red onion roughly chopped
  • 1/4 Anaheim pepper, seeds and ribs removed, roughly chopped
  • 4 gloves garlic
  • 8 cups cubed watermelon
  • 4 tablespoons red wine vinegar
  • 3/4 teaspoon salt
  • 1/4 teaspoon ground pepper
  • Crumbled blue cheese

Instructions

  1. Put onion, pepper, and garlic in a food processor. Pulse a few times so the veggies are small dice.
  2. Add the watermelon, vinegar, salt, and pepper to the food processor. Pulse. Adjust the salt and pepper as needed. The result should not be slightly chunky, not totally smooth.
  3. Chill for at least 2 hours.
  4. Serve soup topped with the blue cheese crumbles.
