Crispy Baked Fish & “Chips”

Description

There is fish and potatoes but it might be a stretch to call it fish and chips. It is baked, not fried. But it is quick and tasty so we won’t get to particular about the name.

Ingredients

  • 4 Cod fillet
  • 2 Tbsp mayonnaise
  • 2 tsp Dijon mustard
  • 1.5 cups frozen shredded hash browns
  • 3/4 cup white cheddar, shredded
  • 1/2 cup plain panko crumbs
  • 2 Tbsp butter

Directions

  1. Preheat oven to 400.
  2. Spray casserole dish with non-stick stray. Add fish.
  3. Salt and pepper fish.
  4. Mix mayo and mustard in a small dish. Coat fish with mixture.
  5. Melt butter in medium glass dish in microwave. Add hash browns, cheese and crumbs and mix to combine.
  6. Press potato mixture on top of the fish in about a 1/2″ layer.
  7. Bake for 20-25 minutes until the fish is cooked through and flakey.
  8. Turn over to broil and cook for about 2 minutes to brown the top of the potatoes.

Notes

  1. I might try adding some acid such as lemon juice, capers or vinegar next time. I’m not sure if that should be before cooking or maybe when serving like regular fish & chips.
