Good cocktail cherries are hard to find so I decided to see if I could do my own. This recipe is still a work in progress, but is better than most store-bought cherries.
Ingredients
- 1 cup cherries (see note)
- 1/2 cup granulated sugar fresh lemon juice
- 1 tablespoon lemon juice
- 1/2 tsp. vanilla extract
- 1/2 tsp. almond extract
- Pinch nutmeg
Directions
- Heat sugar, lemon juice and 1/2 c water in small saucepan. Bring to a boil and stir frequently until sugar is dissolved.
- Turn off heat and stir in cherries.
- Let cool for a few minutes and then transfer to tightly sealing jar or storage container.
- Chill in refrigerator for at least 12 hours.
Notes
- The key is the cherries. I’m still searching. So far the best are canned tart cherries. Frozen cherries from Safeway and Walmart were not good.
